Greetings from Green Spirit Healthy Living!


Raising raw kids. Though I don’t have children of my own, I’ve been very intrigued with this subject lately. Seems I keep experiencing the wonderful effects fresh, live food has on kids. I couldn’t have had a better example of this than my recent houseguests. I met Chang-Yu online through a mutual friend. She was traveling in the US from the UK with her two small children, Jesse (4) and Grace (6) and stayed with me for a couple of weeks. We had such a great time; these kids are bursting with health and energy! They thrive on green smoothies; eat baby spinach right out of the container and love fruit of all kinds – as long as it’s ripe! They have discriminating taste buds and know instinctively what is good for them. We went shopping several times, and never once did they beg for chips, candy or soda like I see so many other kids doing. They go for raspberries, grapes, kale and durian!

This month’s recipe is one Grace thought up when she was 5 and it’s delicious! Raw Ice Cream Cones! Better than anything you can buy and so much healthier. We took along the frozen “ice cream” and cone wrapper and put them together on a picnic at the lake.

Watch this inspiring youtube video by 9-year old cancer survivor, Olivia as she explores real food. I believe if kids are given the choice, they will choose delicious fresh, real food. I love watching all the kids at the farmer’s market as they marvel at all the goodies nature provides.

Seeing the excitement of the schoolchildren that helped Michelle Obama plant the organic garden at the White House was a treat. They have now planted a garden at their school. How wonderful would it be if all children had this opportunity! Alice Waters started the first edible schoolyard in 1995 and it’s finally catching on all across the country.

Farm to school is another great organization promoting fresh, healthy food for kids. I’m sure there are lots more organizations, farmers, parents and kids coming up with great ways to encourage kids to eat more fresh fruit and vegetables. Maybe there’s one in your area that could use your help!

YUM “Bacon Cheeseburgers” – raw, of course!


If you’d like to learn how to make this delicious sandwich, my next class is for you! This is just one of the highlights of my All American Living Foods class. Also learn how to grow your own sprouts and wheatgrass. And of course there always has to be a mouth-watering dessert! Strawberry Shortcake! Not only will you learn how to make a cake out of leftover almond pulp, but how to use Irish Moss to make whipped cream.

If you haven’t already heard, this will be my LAST class in Chicago this summer- and for the near future. I am currently in Austin, Texas, busy working on getting Beet’s Living Foods Café up and running.

I will be back in Chicago over the 4th of July holiday to do my demo at the Taste of Chicago – if you are in town, please come join me on July 5th at noon at the Dominick’s chef booth.
