Greetings from Green Spirit Healthy Living!
Getting ready for Cinco de Mayo! I don’t need the excuse of a Mexican Holiday to want to eat Mexican food, it’s something I’ve always loved. Unfortunately, what we’ve traditionally come to know in the US as Mexican food is heavy, greasy and not too healthful. You can change all that and keep the taste!

My next class, Latin American Fiesta, will show you how. The class is just around the corner, next Sunday May 3rd, and is filling up fast so don’t delay in signing up. It will also be MY LAST CLASS in Chicago for the foreseeable future. In June I will be heading to Austin to help open Beets Cafe and not sure if or when I will return – except of course for my appearance as a “Celebrity Chef” at the Taste of Chicago on July 5th!

This month’s recipe, Zucchini Noodles & "Cheeze"Sauce, gives you a sample of one of the recipes I will be demonstrating. You could also spice up the cheese sauce by adding in 1 tablespoon of chili powder and a pinch of cayenne pepper, and using it as a dip for nacho chips or veggies.
Don’t miss the Green Festival in Chicago May 16th & 17th at Navy Pier. It is one of the best festivals of the year with lots of amazing speakers, green products (I love the eco-friendly clothes!) and fabulous food. Make sure you stop by The Chicago Diner’s Booth – we’ll have some delicious vegan and raw food for you! |
