Greetings from Green Spirit Healthy Living!


Hope your new year is off to a great start! I know that after this historic week I am looking to the future with anticipation, hope and a renewed sense of patriotism. Also helps that I just had a superfood smoothie and am buzzing energy!

What we fuel our bodies with is so important. I know that with the high costs of everything these days, you may be wondering if you should spend the extra money to buy that organic spinach or the raw, organic walnuts. I believe the answer is YES! It is important because you are important. You deserve the best. It will pay off in the long run. Your health is your most precious asset. Without it, you cannot accomplish all you are meant to.

With that in mind, what is the true cost of food? I have known for quite some time that our agriculture subsidies keep some foods artificially cheap ~ but their true cost is high. The cost to our planet and to ourselves.

But my eyes were opened even further by this article, “Why does a hamburger cost less than an apple?” by Brendan Brazier. I thank Brendan for sharing this very important information and encourage you to read it. It will make you think twice the next time you are buying food.

If you’ve been thinking about taking one of my Raw Food Preparation Classes, now is the time! I will be going to Austin, TX this spring to help my good friend, Sylvia Heisey, open her new raw café, Beets. Not sure when I will be back in Chicago. Currently scheduled is my Asian Fusion Class on Feb. 8th. And I will plan another class for March very soon ~ it may be my last one in Chicago for some time. Class size is limited, so don’t delay!

This month’s recipe is one I created to use some leftover cheese I had from making lasagna. Little did I know it would become the most popular soup I ever made at The Chicago Diner! It’s a beautiful green, delicious and so full of vitamins and minerals from LOTS of spinach. Check it out here.
