Chocolate Crispy Balls

1 cup walnuts, soaked and dehydrated (or just use raw, unsoaked)
¼ cup pitted dates, packed
¼ cup sesame seeds
½ teaspoon vanilla extract
2 tablespoons raw chocolate powder (can substitute cocoa or carob powder)
1 tablespoon coconut oil, liquefied at room temperature or in warm water
¼ cup dried goji berries
pinch solar-dried sea salt

 

1. In a food processor outfitted with the “S” blade, process walnuts until coarsely ground.

2. Loosely separate the dates and add them to the walnuts, add the sesame seeds and
process until mixture sticks together.

3. Add the vanilla extract, chocolate powder, coconut oil, goji berries and salt and process until well mixed.

4. Roll into balls, using 1 teaspoon measure for each ball. Chill in the refrigerator for at least one hour.
Store in an airtight container in the refrigerator.
